Masala Chai


Ingredients:
2 crushed Black peppers
2-3 crushed Cardamoms    

Chunk crushed ginger
1 small crushed cinnamon 
2 crushed Cloves
2 cups milk 
3 tbsp Sugar (adjust to taste)
3 tbsp Tea powder
2 cups water

Procedure:
1)Boil two cups of water. 
2) Add all ingredients by crushing them except sugar and milk. 
3) Boil for about 30 seconds. 
4)Allow it to stand for a minute. 
5)Now add milk and boil. 
6) At last add sugar.
7) Strain tea into cups and Masala tea is ready to serve.

Palli Pakodi


 Ingredients:
2 tbsp  Besan Flour
1/2 tbsp Garam Masala
Oil to fry
1 cup Palli or Peanuts
1/4 tbsp Red Chilli Powder
Salt to taste

 Procedure:
1)Take 1 Cup Palli Soak them in Water for about 3-4 min and Drain the water.
2) Mix 2 tbsp of Besan, salt ,Red Chilli Powder and Garam Masala. in a bowl. sprinkle the Mixed Basin Floor on Palli and mix them well so that the floor can evenly spread on each Palli.
Tip:Do not add any additional water the moisture which is there to palli when soaked will be enough.
3)Heat the oil in pan when the oil is ready to fry. drop the pallis in to oil and fry them till they are golden brown.

Puli bongaralu




Ingredients:
2 cups Fermented dosa batter (thick)
salt to taste
a pinch of baking soda
1 cup finely chopped onions
2-3 finely chopped green chillies
4-5 finely chopped curry leaves
hand full of soaked chana dal

Procedure:
1)Mix all the ingredients well.Let them soak well for about 2-3 hrs.
2)Heat oil in a pan.
3)Mix all the ingredients well.
4)Drop the batter with hand into oil like small balls.
5)Fry them till golden brown.
6)Serve them with coconut and tomato chutney.

Punugulu(Bondalu)

Ingredients:
2 cups Fermented dosa batter
salt to taste
a pinch of baking soda
Procedure:
1)Heat oil in a pan.
2)Mix all the ingredients well.
3)Drop the batter with hand into oil like small balls.
4)Fry them till golden brown.
5)Serve them with green chutney.


Mirchi bajji


Ingredients:
Bajji Mirchi 6(Banana pepper)
Besan 1cup
RiceFlour 1/4 cup
Finely chopped onions,green chillies ,coriander leaves
Vaamu(Ajwain) 1tbsp
Aam chur paste
Procedure:

1)Mix Besan,Salt,Ajwain,rice flour with water and made it into a thick batter.

2)Dip the  mirchi in the batter and deep fry them in the oil.
3)Take chillies and cut them at the center.
4)Stuff aam choor,Finely chopped onions,green chillies,coriander leaves into cut mirchi.
5)Sprinkle chat masala over it and enjoy.

Gobi Pakora

Ingredients:
1 pound Gobi/Cauliflower
2 cups Besan(sanagapindi)
1 tbsp garam masala
1tbsp ginger garlic paste
1 tbsp chilli pwdr
tomato ketchup
1/4 cup rice flour
Oil to deep fry
Salt to taste
Chat Masala to sprinkle
Procedure:
1)Make a thick batter by adding Besan(sanagapindi),garam masala,rice flour,salt,pepper,ketchup.
2) Split the gobi into small flowers and dip them one by one in the batter and drop them in the oil.
3)Deep fry them till they are half cooked.
4)Take out from the oil and gently press them and cut into two halves.
5)Again re fry them until they are cooked perfectly.
6)Take them in a bowl and sprinkle chaat masala over it
7)Serve hot and enjoy the delicious flavour of gobi pakora with meetha chutney/mint(green) chutney.

palakura pakodi


Ingredients:
1 cup Chopped Palak
1 cup Curry leaves (chopped )
2 cups Gram flour (Besan)
1 cup chopped onions
Chilli powder to taste
1 tbsp ginger garlic paste
Salt to taste
1/4 cup Water(as required)
Oil for frying

Procedure:
Mix all the ingredients with little amount of water(onions oozes water while mixing) to make a thick batter. drop the mix very carefully with  hands in to hot oil so that they don’t fall apart and deep fry them until golden brown. . 
caution:Be careful while dropping the batter.oil may spill out.
Crispy, crunchy, pakodis are ready to go.

Sorakaya vadalu

Ingredients:

Sorakaya/Lauki/Bottle gourd - 1 cup (grated)
Rice flour - 1 cup
Onion - 1 small (finely chopped)
Green chillies - 3 (finely chopped)
Grated ginger - 1 tsp
Chana dal - 1 tbsp (soak in hot boiling water for 5min)
Salt - to taste
Oil - 2 cups

Procedure:
1) Heat the oil in a deep bottomed frying pan.
2) While the oil gets heated up, prepare the mix.
3) Take a mixing bowl, add rice flour, grated lauki, onion,green chillies, ginger, chana dal and salt.
4) Mix well to make a thick dough. 
Note:DO NOT add water. Lauki itself has lots of water in it.
5) Make small  balls out of dough.
6) In mediumflame, wet your palms with oil and press the dough to the shape of a small pattie.
7) Carefully slide the patties into the pan.
8) Fry all the patties in batches on medium until the color turns golden brown.
9) Drain the excess oil with a tissue paper.
10) Serve hot with any chutney, they taste good on their own too.

Masala Vadalu

Ingredients:
2 cups Chana Dal
1 finely chopped Onions
3 finely chopped green chillies
1 string finely chopped Curry leaves
salt to taste
A pinch of Baking soda
Oil
Procedure:
1)Soak chana dal for 4-5 hrs.
2)Grind 3/4th of the soaked dal with salt.
3)Take the left 1/4 dal,chopped onion,chopped green chillies,curry leaves,grinded chana dal and mix well.
4)Heat oil in a pan and take smalls amount of mixture into hand and press with anoother hand.
5)Drop them into oil and deep fry till golden brown.
6)Enjoy with Tomato ketchup.
